あめ色に熟成、究極の干し柿発売…長野・飯田

長野県飯田市特産の干し柿「市田柿」の高級品「究極の市田柿」が15日、発売された。
表面のきめ細かな白い粉とあめ色の果肉が特徴だ。
通常は、カビや変色を防ぐため、渋柿を硫黄で薫蒸してから干すが、その分味が落ちる。そこで、完熟した柿を薫蒸せず風通しの良い場所で干したところ、甘みが増し果肉も軟らかくなった。

桐(きり)箱に16個入って5,000円。250箱の限定販売。
